Blueberry Cobbler
1 3/4 cups rolled oats
1 1/2 cups crushed pineapple
3/4 cup date pieces
1 1/2 cups fresh or frozen blueberries
1 quart apple juice
1 cup granola

In a 9x13 inch pan, layer the oats, pineapple, dates and berries. If using frozen berries, thaw these out before adding to the dish. Repeat, making two layers. Pour apple juice and sprinkle granola evenly over the dish. Bake for 30 minutes in a 350 degree oven.

Serve hot--either plain or with your favorite non-dairy milk. This cobbler can be refrigerated over-night before baking. It is a great way to make a new start in the morning.
