     A new twist for a popular potluck standby. 
     If you like the flavor of Haystacks and the heartiness of a
     baked potato, then this recipe is for you!

      Medium-large baking potatoes
     Cooked pinto or black beans
     Chopped tomatoes
     Black olives, sliced
     Chopped onions, any kind
     Pimiento cheese sauce
     Crushed corn chips (baked will be lower in fat)

Preheat the oven to 400 degrees. Scrub and pierce the potatoes and bake for 1 to 1 1/2 hours. You can shorten the baking time if you start by cooking the potatoes for 5-10 minutes in the microwave. Then finish them by baking in the oven until they are tender. Turn the oven down to 350 degrees. Cut open the potatoes and layer with desired amounts of the following ingredients in the order given and bake for an additional 12 minutes--beans, tomatoes, olives, onions, cheese sauce, and garnished with some corn chips.
